- 1, 8 oz. package Margaritaville Sunset Shrimp Scampi
- 2 cups baby spinach
- 1/2 cup baby bella mushroom caps, thinly sliced
- 1/4 cup red onion, thinly sliced
- 2 Tbsp. Margaritaville Lemon Herb Vinaigrette
- Cook Margaritaville Sunset Shrimp Scampi according to package directions.
- Combine spinach, mushrooms and red onions in a large bowl with Margaritaville Lemon Herb Vinaigrette and toss to coat.
- Toss with cooked shrimp and sauce to serve.
