- 2 Tbsp. margarine
- 4, 4oz. cod fillets
- 1 tsp. Margaritaville Calypso Rub
- 1 cup Margaritaville Salsa
- 1 lb. cooked white rice
- Heat margarine on medium heat in frying pan or on flat grill.
- Season both sides of cod fillets with Margaritaville Calypso Rub.
- Cook fillets on one side for 5-7 minutes. Flip fillets, top with salsa, and cook for another 3-7 minutes.
- Serve over white rice.
