Thai Shrimp Island Lime Soup

INGREDIENTS

  • 1 cup of basmati rice
  • 2 boxes of Margaritaville Foods Island Lime Shrimp
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 tablespoons red curry paste
  • 1 tablespoon freshly grated ginger
  • 1 (13.5-ounce) can coconut milk
  • 2 cups vegetable stock
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons chopped fresh cilantro leaves

DIRECTIONS

  1. Cook rice according to packaginginstructions. Set aside.
  2. Melt butter in a pan over medium-high heat.
  3. Add onion and bell pepper to the pan. Cook, stirring occasionally, for about 3-4 minutes or until tender.
  4. Add in ginger, garlic, and red curry paste. Stir for approximately two minutes until fragrant.
  5. Pour in coconut milk and vegetable stock.
  6. Season with salt and pepper, to taste.
  7. Bring the soup to a boil then reduce heat and simmer for about 8-10 minutes until the consistency is thicker.
  8. In a skillet, prepare Margaritaville Foods Island Lime Shrimp. Cook according to packaging instructions. Once fully cooked, add to soup.
  9. Add in rice.
  10. Squeeze fresh lime juice and top with cilantro.
  11. Enjoy cozied up with your favorite blanket in front of the fire.
