ScampiSunset Rolls
INGREDIENTS
- 2 boxes Margaritaville FoodsSunset Shrimp Scampi
- 1 Tbsp butter
- 2 brioche buns
- 1 large lemon, sliced for serving
- 1 stick celery
- 1/2 stalk green onions
- 1/2 Tbsp fresh chopped parsley
- 1/2 Tbsp fresh chopped chives
- 1 large garlic clove
DIRECTIONS
- In a large pan, add garlic and simmer until fragrant. Stir in the shrimp and cook according to package directions.
- Meanwhile, preheat a separate frying pan over medium heat. Melt the butter, then add the brioche rolls. Lightly coat them in the butter and toast until golden and warmed through.
- Chop the parsley, chives, and green onions for garnish. Slice the lemon, reserving half for squeezing over the shrimp.
- Once the shrimp are ready, drizzle with fresh lemon juice. Fill each toasted brioche roll generously with shrimp and sauce.
- Spoon any extra sauce into a small dish for dipping. Top the rolls with the herb garnish, add another squeeze of lemon.
