Watermelon & Shrimp Salad
INGREDIENTS
- 1 small seedless watermelon, cut into 1-inch cubes (about 8 cups)
- 1 small cantaloupe, cut into 1-inch cubes (about 4 cups)
- 1 large hot house cucumber, diced
- 1 large navel orange, peeled and sectioned
- 2 boxes of Margaritaville Key West Chili Citrus Shrimp
- 1 small red onion, chopped small
- 1 jalapeño pepper, seeded and minced
- ⅓ cup lime juice
- 1 tablespoon brown sugar
- 1 teaspoon crushed red pepper flakes
DIRECTIONS
- Cut your watermelon and cantaloupe into small cubes. Dice your cucumber and peel and section your orange.
- Cook the Margaritaville Shrimp as directed by the package.
- Combine chopped watermelon, cantaloupe, cucumber, and orange in a large bowl. Drain any extra juice in the bowl before assembling the salad.
- In a large bowl, combine watermelon, cantaloupe, cucumber, orange, red onion, and jalapeño. For the dressing, whisk together the brown sugar, lime juice, and red pepper flakes.
- Drizzle your dressing over the mixture and toss to coat. Refrigerate the dish for at least 20 minutes before serving. Before serving, toss again and garnish with more red pepper flakes.
- Top with Margaritaville Shrimp.
