Shrimp & Summer Vegetable Pasta
INGREDIENTS
- 1 box Margaritaville Sunset Shrimp Scampi
- 2 medium zucchinis
- 2 cups cherry tomatoes
- 8 oz fusilli
- 1 cup grated parmesan
- 1 lime
- garlic powder(measure with your heart)
DIRECTIONS
- Cook pasta until it's al dente.
- Add a dash of olive oil to a skillet.
- Sauté the zucchini until the edges are golden, stirring occasionally.
- Remove the zucchini from the skillet and set it aside.
- Add cherry tomatoes to the skillet. Cover the skillet with a lid until the tomatoes are blistered. Stir them regularly. Remove the tomatoes from the skillet and set aside.
- Cook Margaritaville Foods Sunset Shrimp Scampi according to package directions.
- Once shrimp is fully cooked, add zucchini, tomatoes, cooked pasta, and parmesan. Stir everything together.
- Add a a squeeze of lime and parmesan. Serve immediately.
