Shrimp & Summer Vegetable Pasta

INGREDIENTS

  • 1 box Margaritaville Sunset Shrimp Scampi
  • 2 medium zucchinis
  • 2 cups cherry tomatoes
  • 8 oz fusilli
  • 1 cup grated parmesan
  • 1 lime
  • garlic powder(measure with your heart)

DIRECTIONS

  1. Cook pasta until it's al dente
  2. On medium heat, add shrimp and garlic powder (optional) to the skillet. Cook for about 3-4 minutes.
  3. Chop zucchini and tomatoes and add to your pan.
  4. Cover the skillet with a lid until the tomatoes are blistered & the zucchini is fully coocked. Stir regularly.
  5. Stir everything together in a bowl and add Parmesan.
  6. Add a squeeze of lime, serve immediately.
