Shrimp & Summer Vegetable Pasta
INGREDIENTS
- 1 box Margaritaville Sunset Shrimp Scampi
- 2 medium zucchinis
- 2 cups cherry tomatoes
- 8 oz fusilli
- 1 cup grated parmesan
- 1 lime
- garlic powder(measure with your heart)
DIRECTIONS
- Cook pasta until it's al dente
- On medium heat, add shrimp and garlic powder (optional) to the skillet. Cook for about 3-4 minutes.
- Chop zucchini and tomatoes and add to your pan.
- Cover the skillet with a lid until the tomatoes are blistered & the zucchini is fully coocked. Stir regularly.
- Stir everything together in a bowl and add Parmesan.
- Add a squeeze of lime, serve immediately.
