Shrimp & Summer Vegetable Pasta

INGREDIENTS

  • 1 box Margaritaville Sunset Shrimp Scampi
  • 2 medium zucchinis
  • 2 cups cherry tomatoes
  • 8 oz fusilli
  • 1 cup grated parmesan
  • 1 lime
  • garlic powder(measure with your heart)

DIRECTIONS

  1. Cook pasta until it's al dente.
  2. Add a dash of olive oil to a skillet.
  3. Sauté the zucchini until the edges are golden, stirring occasionally.
  4. Remove the zucchini from the skillet and set it aside.
  5. Add cherry tomatoes to the skillet. Cover the skillet with a lid until the tomatoes are blistered. Stir them regularly. Remove the tomatoes from the skillet and set aside.
  6. Cook Margaritaville Foods Sunset Shrimp Scampi according to package directions.
  7. Once shrimp is fully cooked, add zucchini, tomatoes, cooked pasta, and parmesan. Stir everything together.
  8. Add a a squeeze of lime and parmesan. Serve immediately.
